My Favorite Salad: Thai Salad with Sesame Garlic Dressing

I can't even tell you how much I love this salad. The dressing is what makes it so delicious (although the crunch and texture does wonders too)! I've used the dressing alone on stirfry, potstickers, or to dunk eggrolls in. It is so versatile and delicious with hot food or cold.


The flavors of this Chopped Thai salad are light & refreshing, but the added protein in the nuts and edamame, pack a powerful punch, making it great for lunch or dinner. And honestly you can throw in whatever you want...I've made it a lot of different ways with whatever I have in the house.


Plus, how pretty is this!? Almost to pretty to eat...almost! ;)

If you follow me on Instagram (@ellimoonshop), then you saw how excited I was that my hubs was eating a Kale Salad. He's allergic to several things and doesn't venture far into veggie land, so when I find something that A) he can eat, B) he likes, and C) is healthy, I get excited. This salad hit all 3. I wish I could take credit for this incredible fusion of flavor, but I got it from one of my favorite food blogs: A Pinch of Yum. If you haven't checked it out, do yourself a favor and take a peek.

RECIPE: Chopped Thai Salad with Sesame Dressing

I have improvised with what ingredients I have in the kitchen. With new recipes I always seem to forget one or two items at the grocery store despite my list...I'll blame it on shopping with kids. ;)

* I use Agave instead of honey. Personal preference.

*I've added leftover chicken, steak or pork to the dish and it's awesome.

* I have used pistachios in place of cashews, and if you like a kick, the chili lime cashews from Trader Joe's take this dish to a whole new level.

* I leave carrots off my husband's plate since he *thinks* he's allergic to them. suuuuure lol

* I don't typically use vinegar because of hub's food sensitivity, but when I do, I like Apple Cider Vinegar with the mother.

*I've added some cooked (plain) ramen noodles for some carbs

*I've left dressing on salad overnight and it still tastes good the next day...the kale holds up and doesn't wilt.

*Toss it with stirfry or the Pot Stickers from frozen section of Trader Joe's or deli section at Fresh Market

* I now cook stirfry with sesame oil and add lemongrass paste to all stirfry now and make some version of this dressing for the sauce on the fly. It's so good y'all!

When he first sat down, my skeptical husband asked, "Where's the meat?" But then he took one bite, and his whole demeanor changed. His new take after tasting? "It's really good!"
